Chicken (or Quorn) Tikka Masala
Soften 1 small sliced onion in a pan sprayed with oil. Add 1 cubed medium skinless chicken breast or 85g Quorn pieces and brown. Stir in 1 dspn curry paste (I use Patak's tikka masala paste), and 200g canned tomatoes (I chop them up before adding them). Stir, then simmer for 15 - 20 minutes. Remove from the heat and stir in 1 rounded dspn fat-free natural yogurt or fromage frais. Sprinkle with garam masala (optional). Serve with 50g dry weight, boiled rice. (16 checks, approx 400 calories).
Diet Progress 3 - On Holiday!
I only had time to weigh in and update my ticker last week as we rushed to get through our packing ready for the holiday. At least I was back on track with weight loss last week.
After a week in France at our holiday home and living the French relaxed lifestyle, yet with more activity, I have shed an amazing 7lbs! I have not suffered or starved myself at all - I have entertained twice, eaten out 3 times and have had 50g of the best quality dark chocolate every day. I have done a lot more walking and house work (cooking, cleaning) in the last week as well, altogether the activity and good quality fresh French produce has spurred on my weight loss. Another week in France before returning home to the UK, with an even more active week planned. Tomorrow we put our yacht on the water for the season, so I can look forward to resuming sailing again - at this rate I will reach my 10% weight loss target in no time at all.
I have achieved my 2st weight target now, after so long of bouncing up and down but never quite getting there. My husband has bought me a gift of a luxury perfume as a reward.
My favourite recipe, from the Scottish Slimmers PEP plus book (see my links) is Chicken Tikka Masala - lovely taste and texture, the recipe can be adapted for vegetarians as well. See my new 'Recipes' section if you would like to make this.
