A 'blonde' aged moment!!

Oh dear me, I am afraid I suffered from one of my most 'blonde' and 'aged' moments this week.

When reading the recipe for low check cranberry and orange muffins I miss-read the recipe. The recipe stated 50g of granulated sugar, I read this for 50g of granulated sweetener. I had half a jar of granulated sweetener and started to add this to the ingrediants in the mixing bowl but used the whole amount and still needed another 15g of sweetener. The mixing bowl was completely full up by this time and I was wondering what these muffins would be like with so much sweetener. I took that moment to re-read the recipe and realised that it said sugar not sweetener!! Oh dear me, I had ruined the mixture I had prepared adding all that sweetener, and used all the sweetener I had in the house.

A quick trip to the supermarket and I started my baking all over again. This time I added the 50g of granulated sugar (not much in quantity given the densisty of real sugar compared to sweetener) and 1 level tablespooon of sweetener. The muffins were fantastic and a novel twist on Christmas flavours.

What have I learnt from this experience? I am getting old and befuddled now I have turned 50!
